Sift powdered sugar and flour together 3 times using waxed paper
or foil.

Separate the eggs, add the cream of tarter and vanilla to them.
Beat until soft peaks form. Begin adding the white sugar 2 T. at a
time. Beat until stiff peaks form.

Sift about 1/4 of the flour mixture onto the top of the egg whites
and fold in gently. Repeat this process with the remaining flour
mixture.

|
Pour into an ungreased 10 inch tube pan. Bake on the lowest
rack in a 350 degree oven for 40 to 45 minutes. Immediately
invert the cake and let cool on the counter.
After the cake is cool, loosen the cake from the pan using a
serrated knife. Makes 12 servings.
