     Fruity Oatmeal Muffins

Ingredients
1 1/4 cup oat bran ( Quaker Oatmeal )
1 1/2 cup Whole Wheat Flour
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt (Can be left out)
1 beaten egg
3/4 cup applesauce (Replaces butter)
1/2 cup milk or soy milk
1/4 cup honey
 
1 tbsp cooking oil
1 cup raisins
zest of one orange
1 banana

Instructions
Mix dry ingredients in one large bowl, mix other ingredients in a smaller bowl. Add wet ingredients to dry ingredients. (If done in Stand Mixer add raisins and orange zest and banana last)
Add a little extra flour if you think you might have added too much moisture. Spray cupcake tins with Pam or cooking spray and spoon in mixture (lumpy batter is ok), then place on center oven rack for 16-18 minutes or till golden brown and crisp on top. Cool on wire rack ten minutes then place whatever muffins are not eaten in a tupperware container with a lid.
Note- They're super tasty and the base recipe said they were 133 calories per muffin. All I added was the orange zest and the banana. So... it should be good Weight Watchers wise.
