     Mushroom Stuffed Turkey Breast

Ingredients
5 Tbls butter
1 1/2 cup chopped onions
2 garlic cloves - minced
1 1/2 lbs fresh mushrooms - chopped, about 7 cups
2 slices firm bread, crumbled
1/4 cup diced mixed dried fruit
3 Tbls fresh lemon juice
1 tsp salt
1/2 tsp fresh ground pepper
 
1 whole bone in Turkey breast 4-5 lbs
1 Tbls cornstarch
2 Tbls cold water

Instructions
Heat 4 T butter in large skillet over medium heat. Add onion and garlice and suate until verry soft, but not browned, about 15 min. Stir in bread crumbs; cook, stirring to blend, about 3 min. Add dried fruits, 2 T lemon juice, and half salt and pepper. Let stand until cool.
Heat oven to 350 degrees
Rinse turkey breast and pat dry. Using fingers and tip of small knife, working from wide end, separate skin from flesh to create pocket for stuffing.
Place turkey in baking dish. Sprinkle all over with remaining lemon juice, salt, and pepper. Spoon stuffing under skin and secure. Turn breast skin side up in dish and rub with remaining butter. Roast, basting every 15 minutes, until 160 degrees, about 1 - 1 1/2 hours. Let turkey rest 15 minutes. Make gravy with pan juices.
