     Shrimp Lo Mein

Ingredients
1lb shrimp defrosted, peeled and deveined
1&1/2 cups cabbage chopped
1 green onion
2 celery stalks
1 tablespoon fresh ginger grated
1 tablesppon sugar
1/2 teaspoon salt
1 tablespoon soy sauce
2 teaspoons cornstarch
 
4 tablespoons peanut oil
8 ounces whole wheat spaghetti

Instructions
Cook spaghetti until al dente, rinse w/ cool water and drain thoroughly. Set aside. Mix soy sauce, ginger, cornstarch, salt and sugar in bowl. Add shrimp and let marinate 20 minutes. Heat wok until very hot. Add oil and with slotted spoon add shrimp. Reserve marinade. Stir fry until shrimp is opaque. Remove from pan and set aside.
Add remaining oil and stir-fry vegetables until just tender, about five minutes. Add shrimp along with reserved marinade. Stir fry 2 to 3 minutes or until sauce boils and thicken. Add spaghetti and toss to mix. Remove from heat and serve immediately.
