     Cinnamon Rolls

Ingredients
1 tsp. sugar
1 pkg. (1/4 oz.) active dry yeast
1/2 cup warm water
1/2 cup milk
1/4 cup sugar
1/4 cup butter
1 tsp. salt
2 eggs, beaten
4 cups flour
 
For Topping-
1 cup brown sugar
1 stick (1/2 cup) butter
For Filling-
4 tbs sugar
1 tbs. cinnamon

Instructions
Dissolve 1 tsp sugar and yeast in warm water until foamy (10 minutes). Warm milk until it bubbles around the edge and mix in 1/4 cup sugar, 1/4 cup butter and salt until melted. Let cool to lukewarm.
Combine yeast mixture, milk mixture, eggs and 1 1/2 cups of flour. Stir in remaining flour 1/2 cup at a time. Turn out and knead until smooth and elastic, 8 minutes. Place in greased bowl, turning dough to coat and let sit in warm place for about an hour or until doubled in size.
Mix granulated sugar and cinnamon and set aside. Put butter and brown sugar in small saucepan and stir until melted. Pour into 2 pie plates. Punch down dough and turn out onto floured cutting board. Roll out to about 1/4 inch thick. Sprinkle with cinnamon sugar (you don't have to use all of it) and tightly roll up. Cut into 1 inch pieces with serrated knife (about 15 pieces). Put in pie dishes.
Cover and let rise again until doubled in size. Bake in 350 degree oven about 20 minutes or until they start to brown. Let cool about 2 minutes then turn out onto plates. Scrape pie plate if topping sticks to it.
