     Bibb and Parsley Salad with Anchovy Dressing

Ingredients
2 anchovy fillets
1 1/2 teaspoons fresh lemon juice
1 tablespoon extra-virgin olive oil
pinch of sugar
coarse salt
ground pepper
1 head Bibb or Boston lettuce, leaves separated and roughly torn
1/2 cup packed fresh parsley leaves
 

Instructions
In a large bowl, mash 2 anchovy fillets with the back of a fork.
Whisk 1 ½ teaspoons fresh lemon juice, 1 tablespoon extra-virgin olive oil, and a pinch of sugar.
Season with coarse salt and ground pepper.
Add 1 head Bibb or Boston lettuce, leaves separated and roughly torn, and ½ cup packed fresh parsley leaves and toss to combine.
