Happy Family Beef Stir-Fry

2 Tbsp low-sodium soy sauce
|
|
4 tsp dark sesame oil, divided
|
|
1 tsp sugar
|
|
1 tsp cornstarch
|
|
1 lb beef flank steak, cut into strips
|
|
1 small red bell pepper, cut into strips
|
|
1/2 lb snow pea pods, julienned
|
|
2 cloves garlic
|
|
1 Tbsp ginger root, grated
|
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |

|
In a large bowl, combine soy sauce, half sesame oil, sugar, and cornstarch and mix till blended. Add beef and toss to coat well.

Heat remaining oil in wok or large skillet over med-high heat.
|
|
|
Add bell pepper and snow peas and stir-fry for 2 minutes. Add garlic and ginger, cooking about 15 seconds. Don't burn!
|
|
|
Remove bell peppers and snow peas. Add beef and stir-fry.
Add back veggies and toss together to heat.

Suggestions |
|
Serve on a bed of spaghetti squash. Add a big green salad.
