     Morrocan chicken with lemon & green olives

Ingredients
4 tbsp olive oil
2 onions, finely chopped
4 garlic cloves1 tbsp paprika
1 tbsp ground cumin
1 tsp black pepper
1/2 tsp saffron powder/pinch of saffron threads
1 tbsp turmeric
8 chicken pieces on bone
1 cup green olives
 
2 lemons, 1 juiced & 1 sliced
500ml chicken stock
chopped parsley to garnish

Instructions
Heat the oil in a pot over medium heat.
Add the onion and cook until softened but not coloured, about 5 minutes.
Add the garlic, paprika, cumin, pepper, saffron, turmeric and chicken and cook gently, stirring until the chicken in coloured by spices.. about 5 minutes.
Add olives, pour over lemon juice and chicken stock and tip in the lemon slices. Simmer gently until chicken is cooked.
Serving Suggestions
Sprinkling of parsley, ontop a bed of hot buttered couscous, rice or warm crusty bread
