     Honey-Glazed Carrots

Ingredients
2 tbsp olive oil
1 1/2 lb carrots, cut into 1/4 inch-thick slices
2 tbsp honey
 

Instructions
Heat oil in skillet over medium-high heat. add carrots and salt to taste, and saute 2 minutes.
Cover and reduce heat to low. cook until tender, about 15 minutes. add a few tablespoons of water if necessary to prevent sticking.
Add honey and toss to coat. Season with freshly ground black pepper.
