Chicken stew with Tortellini

Ingredients
-
1 medium zucchini or yellow squash
-
1 red or yelllow sweet pepper
-
1 medium onion
-
14-1/2 can sodium-reduced chicken broth
-
6 cups torn spinach
-
1-1/2 cups sliced baby carrots
-
2 cups cheese-filled tortellini
-
1 tsp. dried basil, crushed
-
1/2 tsp. dried oregano, crushed
 
-
1/2 tsp. Mrs. Dash
-
2 cups chopped cooked chicken

Instructions
Halve zucchini lenghwise and cut into 1/2 inch slices. Coarsely chop red or green sweet pepper. Cut onion into bite-size wedges.
In Dutch oven, bring broth and 2 cups water to boiling. Add zucchini or squash, sweet pepper, onion, spinach, carrots, tortellini, basil, oregano, Mrs. Dash, and 1/4 tsp pepper. Reduce heat. Simmer covered about 15 minutes, or until tortellini and vegetables are nearly tender.
Stir in cooked chicken. Cover and cook for 5 minutes more or until pasta and vegetables are tender. If desired, sprinkle with coarsely ground black pepper.
