     Mom's Cherry Nut Cake

Ingredients
3 cups flour
2 teaspoons double acting baking powder
1 teaspoon of salt
1/2 cup of Crisco
1/2 cup of butter
4 cups (or 1 pound) of confectioners sugar
1 teaspoon almond extract
4 eggs
1 cup milk
 
1/2 cup chopped walnuts
1 cup maraschino cherries, quartered

Instructions
Preheat oven to 350 degrees. Grease and flour a 10 inch tube pan or bundt pan.
Sift flour, baking powder, and salt. Combine Crisco and butter, and beat in confectioner's sugar gradually. Add almond extract and eggs, beating one minute after each egg. Add milk alternately with dry ingredients. Fold in walnuts and cherries. Pour into well greased and floured pan. Cut gentley through the batter to take out the air.
Bake at 350 degrees for 60-65 minutes, or until toothpick inserted into cake comes out dry.
The original recipe says while warm to spread with butter and sprinkle with sugar and cinnamon, but I just dust it with confectioners sugar when cool, or drizzle on a loose white frosting so it drips down the sides.
