     Homemade Marshmallows

Ingredients
3- 1/4 oz. envelopes of plain gelatin
1 cup cold water
2 cups sugar
2/3 cup light corn syrup
1/4 teaspoons salt
1 teaspoon vanilla
Potato starch
Confectioner's sugar
 

Instructions
Line a 13x9x2 inch pan with foil. Coat with pan spray. Sprinkle geletin over 1/2 cup of cold water in a large mixing bowl.
Combine in saucepan-sugar, corn syrup, salt, and 1/2 cup of water. Stir over medium heat until sugar is dissolved, brushing sides of pan with a wet pastry brush. Increase heat to medium-high to boil. Boil, without stirring, until syrup reaches 240 degrees F, about 8 minutes.
With mixer running at low speed, slowly pour the hot syrup into the gelatin mixture. Increase whip speed and whip until very thick (not too longor or it is hard to spread). Blend in the vanilla.
Spread into pan. Allow to set 2 to 3 hours. Turn out onto a mixture of 1/2 potato starch and 1/2 confectioner's sugar. Cut into cubes and dredge in powder.
