     Strawberry Rhubarb Crunch

Ingredients
1 cup flour
2/3 cup packed brown sugar
3/4 cup oatmeal
6 tablespoons butter
2/3 cups sugar
2 teaspoons cinnamon
2 cups diced rhubarb
2 cups sliced strawberries
1 cup water
 
2 tablespoons corn starch
1 teaspoon vanilla

Instructions
Preheat oven to 350 degrees. Combine first 6 ingredients. Blend until crumbly. Press half the crumb mixture into a greased 9x13 pan. Cover with fruit.
In a saucepan, blend water, cornstarch, and vanilla. Stir over heat until thick and clear.
Pour over fruit, then top with remaining crumbs. Bake for 60 minutes.

1/9th= 275 calories, 8 g. fat, 20 mg. cholesterol
