     Apple Walnut Cake

2 cups of coarsely chopped apples
2 cups of sugar
2 eggs
2 cups of sifted all purpose flour
2 teaspoons soda
2 teaspoons cinnamon
1 teaspoon of salt
1/2 cup of vegetable oil
2 teaspoons of vanilla
1 cup of chopped walnuts, rasins, dates
4 tbsp soft butter
3 cups conf. sugar
2 tbsp lemon juice
cold water
few grains of salt

Preheat the oven to 350. Next combine the apples and sugar; let stand. Beat the eggs slightly; beat oil and vanilla. Mix and sift the flour, soda, cinnamon, adn salt.
Stir into the mixture alternately with apple mixture. Sir in walnuts or whatever you please.
Pour into greased and floured 13x9x2" pan. Bake at 350 degrees for about an hour or until done. Frost lemon butter frosting; decoreate with walnut meats. Cut into squares to serve.
To make the frosting cream 4 tbsp of soft butter or margarine, add 3 cups of conf. sugar gradually, then beat in 2 tablespoons lemon juice & enough cold water ( 1 or 2 tbsp) to make spreading consistency. Beat in a few grains of salt. Spread on cake!
