     Persian Baklava

Ingredients
1 pound phyllo dough
1 1/2 cups butter, melted
1 pound walnuts
1/2 cup pine nuts
1 teaspoon cardamon
1/3 and 3/4 cups sugar
1/3 cups lemon juice
1/3 cup orange juice
3/4 cup honey
 
1 tablespoon fresh orange zest
1 teaspoon vanilla

Instructions
Combine nuts, 1/3 cup sugar, cardamon in a processor. Pulse until finely chopped.
Brush sheet pan with butter. Carefully layer 4 to 6 sheets of phyllo dough, brushing with butter between the sheets, spreading 1/3 nut mixture on each layer. Repeat, ending with 4 to 6 sheets of phyllo. With a sharp knife, score phyllo half way through in daimond shapes. Bake 1 hour at 300 degrees until golden brown.
While pastry is baking, make syrup. Combine in saucepan- 3/4 sugar, lemon juice, and orange juice.Simmer over medium heat for 15 minutes, stirring occasionally. Remove from heat, and while still hot, add honey, orange zest, and vanilla.
As soon as you remove pastry from oven, spoon hot syrup over the top. Allow to cool.
Serving Suggestions
Better the next day! FYI Greek Baklava is made with cinnamon, and no citrus or cardamon.
