1 1/2 cups flour
|
|
3/4 cup sugar
|
|
1 tsp baking soda
|
|
1/2 tsp baking powder
|
|
1 cup orange juice
|
|
1/3 cup vegetable oil
|
|
1 tbsp grated orange rind
|
|
LEMON ICING-
|
|
2 cups icing sugar
|
|
|
|
3 tbsp lemon juice
|
|
1 tsp grated lemon rind
|
|
3 tbsp butter
|
|
splash of milk for the right consistency
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Mix the wet and dry ingredients separately, then mix the two
together but do not over mix, lumps are cool.
|
|
|
pour into well greased 20 cm pan, bake at 350F (180c) for 35 to 40
minutes or until it is browned on top and a toothpick comes out
clean.
|
|
|
Blend the icing ingredients together, adding milk if it is too thick.
|
|
|
Let the cake cool completely in the pan, then smother it in icing.
