     Carmel Chex Mix

Ingredients
4 cups corn chex
4 cups rice chex
1 cup peanuts (or mixed)
1 cube butter
1 cup brown sugar, firmly packed
1/2 cup light corn syrup
1 tsp vanilla extract
1/2 tsp baking soda
1 cup M&Ms
 

Instructions
Preheat oven to 250 degrees. Spray a large cookie sheet with Pam. In a large bowl, mix the cereals & nuts then set aside. In a pan on the stove, bring butter, brown sugar & corn syrup to a bowl over medium heat stirring constantly.
Once mixture begins to boil, let boil for 5 minutes without stirring. Remove from heat and mix in vanilla & baking soda, stirring well after adding each.
Pour mixture over cereal/nuts, stir gently.Spread into prepared cookie sheet and bake for one hour, stirring after every 15 minutes (don't worry if everything isn't coated with the caramel - it will be by the end.)
Remove from oven and when it's cool enough to handle (but still warm) take off cookie sheet and put into large airtight container, breaking apart the large clumps (and leaving off the lid so it doesn't sweat.) Let cool completely and then add M&Ms. It's sooooooooo stinking good.
