     Country Chicken Supper

Ingredients
3 chicken breasts, cut in pieces
2 T oil
1/2 C chopped onion
14 oz can French style green beans
14 oz can chopped tomatoes
14 oz can sliced carrots or 2 large carrots
1 large potato, cubed
1 cup uncooked rice
1/2 t salt
 
1/4 t pepper
1 C water
1/2 C shredded cheddar

Instructions
Heat oil in skillet, add chicken and onion. Sauté 3 minutes. Add vegetables, rice, and salt and pepper. Mix gently. Pour water over top of chicken mixture. Cook, covered, over medium-low heat for 20 minutes (or until potatoes and rice are tender), stirring occasionally. Sprinkle cheese on top. Let stand covered for 5 minutes.
For a southwest flavor, substitute black beans for green beans and corn for carrots.
