     Split Pea Soup

Ingredients
1 pkg Dried Split Peas (rinse and clean)
1 Onion
1/2 Cup of Chopped Celery
1/4 Cup of Chopped Parsley
Pinch of Thyme or Rosemary
 

Instructions
Bring to a boil in large kettle with 1-quart of water.Add one cup of dried split peas (2 cups for a thicker soup).Cover, remove from heat and let stand 1 hour.Add hambone and one or more sliced onion.
For extra flavor add the choppeed celery,chopped parsley, and/or thyme rosemay.
Simmer about 1-2 hours until the peas are soft.Remove the hambone. Rub the soupe a sieve or crush peas with a fork.
Dilute to desired thickness with milk and season to taste with salt and pepper.
Serving Suggestions
Makes 4-5 thicker soup serving, or makes 8-10 thinner soup servings.
