     Eat-Your Veggies Pasta and Pizza Sauce

Ingredients
2 tablespoons olive oil
2 onions, peeled and chopped
4 cloves garlic, minced
1 28-ounce can whole tomatoes, puréed
Salt and pepper to taste
1 teaspoon dried oregano
1 teaspoon dried basil
2 carrots, peeled and shredded (or chopped very fine)
1 zucchini, shredded (or chopped very fine)
 
1 red or green pepper, chopped fine
A few handfuls baby spinach

Instructions
Heat oil in a small saucepan with the onions. Sauté until they soften and start to turn golden.
Add the garlic and stir for a few minutes more. Add the puréed tomatoes, seasonings, carrots and zucchini. Simmer for 20 minutes.
Stir in the spinach and continue to simmer until it wilts and heats through. Remove from heat and let cool for a while. Puree in blender or with immersion blender.
Serve with pasta or use as a pizza sauce
Serving Suggestions
Hidden veggies make it picky eater friendly and very healthy. Double this and freeze for when you need it
