     Orzo Pilaf

Ingredients
1 16 oz box orzo
6 cups chicken broth
2/3 c. extra virgin olive oil
1/8 c. balsamic vinegar
1/4 c. fresh lemon juice
3 or 4 green onions, chopped fine
1/4 c. parsley chopped fine
minced garlic to taste
1 T. sugar
 
salt and pepper to taste
5 green onions
parsley, cilantro mint and fresh basil
1 red and 1 yellow bell pepper, finely diced
1/2-1 c.petite peas
1/2- 1 c. pine nuts

Instructions
Mix oil thru salt and pepper. Shake in a container and set aside
Bring broth to a boil-add box of orzo. Stir and cook for about 10 minutes. All broth should be absorbed. Put it in a large bowl to cool.
Chop herbs, onions and peppers to make about 2-3 cups combined. Add to cooled orzo. Add vinegarette. Use it all. It will absorb.
Lightly toast pine nuts in a pan. Cool and add them and peas to orzo. Best to refrigerate overnight so it can all settle in.
