2 cups shredded zucchini (use large zucchini and remove the seeds)
2 packets True Lemon
Instructions
Preheat oven to 350 degrees.
In large bowl, mix flour, sugar, baking powder, salt and chopped nuts.
In medium bowl, beat eggs slightly and stir in salad oil, shredded zucchini and grated lemon peel.
Stir zucchini mixture into flour mixture just until flour is moistened.
Spoon evenly into two greased bread pans.
Bake 1 hour and cool on rack 10 minutes.
Take out of pans and continue to cool.
