     Marbled Chocolate Cheese Cake

Ingredients
2 cups chocolate graham wafer cracker crumbs (oreo cookies)
1/4 cup sugar
1/4 cup melted butter
1 1/2 lbs cream cheese (750g) 3 packages
1 cup sugar
3 eggs
2 tsps vanilla or almond extract
3 squares semi-sweet chocolate (melted)
 

Instructions
Combine crumbs & sugar – blend in butter. Press onto bottom and sides of 8” – 9’ greased springform pan.
Beat cream cheese until smooth. Gradually beat in sugar. Beat in eggs one at a time at low speed. Add almond extract. Pour about ˝ of creamed mixture into another bowl. Add melted chocolate & blend well. Pour about ˝ white mixture into crust, top with ˝ chocolate mixture, etc. Gently score a knife through the mixture to make a marble design. Bake at 300 F for one hour. Turn off oven and leave cake in it for one hour Take out, cool -- Top with glaze and put in refrigerator to cool immediately.
GLAZE Melt 2 square semi-sweet chocolate with 2 tbsp. butter. Blend well and pour over N.B. Take cake out at least 1 1/2 hours before serving to “mellow”.
