     Vegetable Slaw

Ingredients
8 cups green cabbage, shredded (2 bags preshredded slaw mix)
3 cups radicchio, thinly sliced (about 1/2 head)
8 oz snow peas, thinly sliced lengthwise
1 1/2 cups red oinion, thinly sliced
3 Tbsp chopped parsley
6 Tbsp rice vinegar
1 Tbsp sugar
1 1/2 tsp kosher salt
1 tsp black pepper
 
3 Tbsp safflower oil
1 Tbsp sesame oil

Instructions
Combine vegetables and parsley in large bowl.
Combine remaining ingredients to make dressing.
Pour dressing over vegetables and refrigerate to allow flavors to blend.
