1 1/4 cups sugar
|

1/2 cup water
|
|
1/4 cup mint leaves
|
|
2 medium cantaloupes, peeled, seeded and cut into chunks
|

Pinch of grey salt

Instructions |
|
|
Combine sugar, water and mint over low heat in saucepan until sugar dissolves; remove from heat and cool.
|

|
Puree fruit in food processor; pour into large bowl and add salt; strain mint from syrup and add to bowl; blend well.
|
|
|
Pour mixture into pre-chilled 7x12 glass baking dish; place uncovered in freezer.
|
|
|
Stir with a fork every half hour until mixure is almost frozen but still grainy, about 3-4 hours total.
