     Oatmeal-Carrot Cookies

3/4 cup margarine or butter
1 3/4 cup all-purpose flour
3/4 cup packed brown sugar
1/2 cup granulated sugar
1 egg
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. baking soda
1/4 tsp. ground cloves
1 tsp. vanilla
2 cups rolled oats
1 cup finely shredded carrots
1/2 cup raisins (optional)

In a mixing bowl beat margarine or butter with an electric mixer on medium to high speed for 30 seconds or until softened. Add about half of the flour, the brown sugar, sugar, egg, baking powder, cinnamon, baking soda, cloves and vanilla. Beat until combined, scraping sides of bowl occasionally. Beat or stir in remaining flour. Stir in oats, carrots, and raisins, if desired.
Drop by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake in a 375 oven for 10-12 minutes or until edges are golden. Remove from baking sheet. Cool on a wire rack.
