     Chicken Pot Au Feu

Ingredients
2 medium carrots, cut into 1/2 inch slices
1 medium onion, cut in half
2 medium celery stalks, cut into 1 inch pieces
2 medium new potatoes, cut into 1/4 inch pieces
3 lbs broiler / fryer chicken
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 cup water
1 tsp. dried bay leaves
 
1 tsp dried basil
1 tsp dried tyme

Instructions
Place carrots, onion, celery and potatoes in the bottom of the crock pot slow cooker.
Add the whole chicken and top with the remaining ingredients
Cover- cook on Low 8 to 10 hours (or on High for 3 1/2 to 5 hours)
Serving Suggestions
I used baby carrots and small red potatoes to make it really easy
