Sift flour and salt into mixing bowl.Then make a well in the center of the flour/salt mix.
Break the eggs into the well. Whisk the eggs and flour together.Next,mix together the water and milk in a separate bowl or large measuring cup.

Add the liquid to the flour a little at a time, whisking to make a smooth batter.Melt 2 tablespoons of the butter and mix into batter. Strain if lumpy.Melt butter in a small frying pan.Get the pan really hot,then turn the heat down to medium.Put about 2 tablespoons bater on the hot frying pan.Tilt the pan so that the batter covers the base.

Cook the crepe for about 1 minute.Use a spatula to loosen it,then flip it over.cook the other side for 30 seconds.

Fill the crepes with fresh fruit and plenty of maple syrup.
