     Stuffed brinjals

Ingredients
brinjals (1 half per person)
mushrooms
rose tomatoes
1 clove garlic
salt & pepper
turmeric
feta
 

Instructions
Boil brinjals in salted water for 20 min
Cut in half lengthwise, and scoop out middle. Stuff mixture back into brinjal skin, and bake for 30min at 200 C.
Mix brinjal flesh with chopped up mushroom, tomatoe, salt, pepper & turmeric
Turn on grill and crumble feta over top. Grill until melted.
