     Tu B'shevat Chicken Recipe

Ingredients
6 chicken cutlets
3 eggs
3 Tbsp ketchup
2 cups of crumbs (half unflavored bread crumbs-half panko crumbs)
1 red bell pepper-1 orange bell pepper - 1 yellow bell pepper
2 onions, sliced
1 lb. sliced mushrooms (optional)
1 jar apricot preserves (12oz.)
1 cup ketchup
 
3 Tbs brown sugar
oil for frying cutlets

Instructions
Beat the eggs and add the 3 tbs of ketchup Dip the cutlets in the egg mixture Combine the two types of breadcrumbs and dip the cutlets in the egg mixture Fry the chicken cutles for 3 min on each side and place the cutlets in a roasting pan Save the frying pan for sauteing the peppers onions and mushrooms Slice the peppers in strips along w/ the onions (and mushrooms, if using). Saute the veggies in the reserved frying pan, adding oil as needed, until soft buy not mushy
In sauce pan mix apricot preserves with the cup of ketchup and brown sugar and heat until smooth. Add to peppers and onions and spoon mixture over each cutlet. Bake in 350 oven for 20-30 minutes or until tender.
