In a wok or sauté pan, fry 1 T chopped garlic and tofu, until the tofu has reached your desired level of crispness. Add a big handful of rice noodles and a bit of chicken stock or water. Remove from heat and add the sauce ingredients. How about a squeeze of lime, some bean sprouts and ? Combine well and set aside.
In another pan, stir fry the egg- either in pieces or as a whole omelet – and add to your Pad Thai.
Serve immediately, garnished with bean sprouts, a half lime, cilantro and peanuts.
sauce ingredients- 3 tablespoons brown sugar, 3 tablespoons fish sauce, 1 tablespoon soy sauce, 1 tablespoon tamarind concentrate
