     Sausage Apple Quiche

Ingredients
1 Pillsbury Pastry Pie Shell (9inches)
1/2 lb bulk Sausage (Jimmy Dean)
1/2 cup chopped Onions
3/4 cup shredded, peeled Johnny Smith Apple
1 T Lemon Juice
1 T Sugar
1/8 tsp crushed Red Pepper Flakes
1 cup shredded Cheddar Cheese
3 Eggs
 
1-1/2 cups Half-and-Half
1/2 tsp Salt
Pepper to taste

Instructions
Preheat oven to 425 degrees. Place foil inside pastrsy shell. Partially fill with rice or baking pie weights. Bake 10 minutes. Remove foil and rice or weights. Continue baking 5 min. Lower oven to 375 degrees.
Brown sausage and onion. Drain. Add apples, lemon juice, sugar and pepper flakes. Cook on medium high, 4 minutes, stirring constantly. (Apple will be tender and no liquid left). Cool.
Spoon sausage mixture into pastry shell. Top with cheese. Whisk eggs, half-and-half, salt and pepper. Pour over sausage mixture.
Bake 35 to 45 minutes. (Center should come clean with toothpick). Let stand 10 minutes.
