2 eggs

8 oz. cream cheese, softened

1/4 cup chopped red onion
|

1 Tbsp chopped green onion
|

1/2 cup carrots, shredded

2 cups frozen corn

1/2 tsp salt

|
1/4 tsp black pepper
|
|
1/2 cup crushed crackers
|

Instructions |

|
Preheat oven to 350. In a large bowl, mix cream cheese and eggs until well blended. Add remaining ingredients except crackers and butter; mix well.

Pour into a lightly greased 8 inch square or round baking dish. Pat down mixture.
|
|
|
In a small bowl, melt butter and add crushed crackers; stir. Sprinkle cracker mixture on top.
|
|
|
Bake for 40 to 45 minutes. Let stand for a few minutes before serving.
