Beat the eggs slightly with 3 T. milk and a dash of salt and pepper.
Melt 2 T. butter or margarine over medium heat; pour in egg mixture.
As egg begins to set in skillet, lift cooked portion with a spatula so that uncooked portion flows to the bottom. Continue process for three to five minutes, or until eggs are completely cooked. Stir slightly to break up eggs.
