Remove and discard skin from chicken. Combine chicken, buttermilk, and garlic in a large resealable plastic bag. Refridgerate over night.
Heat oven to 400 degrees Fahrenheit. Lightly coat a large baking sheet with vegetable cooking spray.
On wax paper combine bread crumbs, parmesan cheese, salt, lemon zest, and thyme.
Roll chicken in the coating and place on the baking sheet, bone side down. Bake for 35 to 40 minutes, turning the chicken halfway through, or until crispy and the juices run clear when the chicken is pierced with a fork.
