     Leg of lamb

Ingredients
1 leg lamb
2 large lemons
Rosemary (dried or fresh)
chopped garlic ( 2 cloves or already chopped)
Salt and pepper
1 oz olive oil
 

Instructions
Pre heat oven to 450 degrees. line roasting pan with aluminum foil and use a roasting rack so lamb is raised from the pan. Remove surface fat from the leg of lamb.
Poke top surface of lamb about 1/2 inch using tip of sharp knife or other pointed utensil. Rub garlic over surface of lamb so garlic pieces penetrate into the tiny slits made with the utensil. Rub entire surface of lamb with olive oil. Cut lemons in half, remove seeds and squeeze lemon joice over surface of lamb. Sprinkle top with Rosemary and salt and pepper. You can place the lemon halves, pulp side down, on top of lamb for added flavor. Place about 1 cup water in baking pan. You can add more as the meat cooks if needed to keep the drippings from burning.
Cook at 450 for 25 minutes. Reduce heat to 350 degrees and cook until internal temperature is 160 degrees on meat thermometer for medium rare or 168 for well done.
Remove from oven and let sit for about 20 minutes before slicing and serving.
