     Smooth Maple-Carob Zippers

Ingredients
1 c raisins (soaked 4 hours 1 inch water)
1 c pecans (grint to fine meal- food processor)
1 c carob powder
3 TBL maple syrup
1/4 tsp cayenne pepper
1/4 tsp cinnamon
3/4 tsp nutmeg
 

Instructions
Put pecans in food processor and grind to a medium-fine meal. Add remaining ingredients and pulse chop until you achieve a slightly chuncky, fudgy consistency. The mix is very moist and thick. Use a spatula to free the blade.
Scrape the dough into a medium bowl, then oil your hands with pam-spray.
Pinch off small pieces of dough and roll into bite size balles abut 1 inch in diameter.
Store in a tightly sealed container in the freezer for upt to 6 months. Wait 24 hours prior to consuming so the flavors blend and the texture becomes firm and chewy. The bites will turn soft if left at room temp. Suggest eating right away out of the freezer.
