     Spinach-Avocado Dip

Ingredients
1 ripe avocado
1 med. onion (roughly chopped (1c))
1 TBL fresh lemon juice
3 c stemmed spinach leaves
1 tsp sea salt
 

Instructions
Add ingredients to the food processor. Process until relatively smooth, 60-90 seconds. Expect the texture to retain bits of spinach flecks and fiber.
Store in a tightly sealed container in the refrigerator for up to 2 days.
Serving Suggestions
Use as dip, salad dressing, or a spread for crackers/bread, vegan burrito.
