     Sunny Vegetable Pate

Ingredients
2 TBL parsley
1 red or orange bell pepper
1 c sunflower seeds
1 bunch scallions cut into 1 in. pieces
1/4 c extra-virgin olive oil
1 TBL soy sauce
1/2 tsp sea salt
1/2 tsp black pepper
dash of cayenne pepper
 

Instructions
Chop the parsley. Roughly chop the bell pepper.
Put all ingredients into the food processor. Blend for 60-90 seconds, until thick with a smooth yet granular texture from the tiney vegetable bits.
Store in tightly sealed container in the refrigerator for up to 5 days.
Serving Suggestions
Dip, stuffed into hollowed tomatoes, or as a spread on crackers or bread.
