Crustless Quiche

Ingredients
-
1 3/4 cups half and half
-
1 cup shredded Monterey Jack Cheese
-
1/2 teaspoon salt
-
1/4 teaspoon paprika
-
1 teaspoon grated onion
-
pinch cayenne pepper
-
3 eggs
-
1 (4 oz.) can chopped green chilies
 

Instructions
Preheat over to 325 degrees. Melt butter in 9 by 13 inch pan. In a saucepan, scald the half and half. When tiny bubbles begin to form around the edge, remove from heat and add the cheese.
Stir until cheese melts, then add salt, paprika, onion, and pepper.
Beat in eggs, on at a time. Stir in green chilies (or jalapenos).
Bake for about 45 minutes of until set. May be frozen and reheated.
