     Chocolate Chip Cupcakes

3 1/4 cup plus 1 Tbs. cake flour
4 1/2 tsp. baking powder
1/4 tsp. salt
1 Tbs. vanilla extract
1 cup plus 2 Tbs. milk
1/2 plus 6 Tbs. (1 3/4 sticks) unsalted room temperature butter
1 3/4 cup sugar
5 egg whites
2 cups chocolate chips

Preheat oven to 350 degrees.
Whisk 3 1/4 cup cake flour, baking powder, and salt. Stir vanilla extract into the milk in a small separate bowl. Cream butter until smooth. Adding sugar in a steady stream, beat until pale and fluffy.
Add flour in three batches, alternating with 2 additions of milk mixture and beating until just combined with each. In another bowl, whisk egg whites until stiff peaks form. Fold 1/3 of egg whites then gently fold in remaining. Toss chocolate chips with remaining flour and fold into the batter.
Bake about 22 minutes.
