     Provencal Tomatoes

Ingredients
6 ripe tomatoes
1½ fresh white bread crumbs (slices, crust removed)
¼ cup minced scallions (white and green parts – 2 scallions)
¼ cup minced fresh basil and parsley.
½ tsp minced fresh thyme
2 tablespoons minced garlic
Freshly ground black pepper and salt
½ cup gruyere cheese
Olive oil
 

Instructions
Preheat oven to 400º Cut the cores from the tomatoes, removing as little as possible. Cut them in half crosswise and remove seeds and juice. Place tomato halves on baking dish.
In a bowl, combine the bread crumbs, scallions, basil, parsley, garlic, thyme and salt. Sprinkle the tomato halves generously with salt and pepper. Fill the cavities and cover the tops of the tomatoes with the bread crumb mixture. Bake the tomatoes for 15 minutes or until tender. Sprinkle with cheese, drizzle with olive oil and bake for 30 seconds more. Serve hot or at room temperature.
Can be served as a main dish or an app. You can use wheat bread, but it introduces a nuttier flavor.
