     Sephardic Matzo Spinach Pie

Ingredients
5 matzos
2 packages (10 oz) frozen chopped spinach, thawed and drained well
1-1/2 cups mashed potatoes
3 eggs
2 tbsp vegetable oil
3/4 cup cheddar cheese, shredded
 

Instructions
Preheat oven to 350°F. Combine 1 egg, well beaten, with 3/4 cup mashed potatoes, 1/2 cup shredded cheese and spinach in a bowl and mix well. Season with salt and pepper to taste. Soak matzos in a shallow pan of warm water about 3 minutes. Place matzos between 2 towels to absorb excess water. Cover inside of a 9 in. square baking pan with half the oil. Heat pan in oven 2 minutes. Remove pan from oven and carefully line bottom and sides of hot pan with some of the matzo. Spread spinach filling evenly over matzo. Cover filling with remaining matzo. Beat remaining 2 eggs in a bowl. Add remaining mashed potatoes, cheese and oil. Mix well and spread over matzo. Score top with a fork. Bake 1 hour or until top is lightly browned.
