     Cream of Leek Soup

Ingredients
1/2 c. melted butter
1/2 c. flour
3 cans chicken broth
3 leeks; cleaned and chopped
1/2 tsp. pepper
2 c. mashed potatoes
1-1/4 cup Swiss Cheese (5 oz.)
 

Instructions
Combine broth, leeks and pepper; bring to a boil over high heat. Reduce heat to low and simmer 25 minutes.
Combine butter and flour.
Stir in butter mixture until soup is thick; simmer 5 minutes then slowly add mashed potatoesl Add cheese until melted.
