     Healthy muffin snack

Ingredients
1cup unbleached whole wheat flower
¾ cup flaxseed meal
¾ cup oat bran
1 cup dark brown sugar
2tsp baking soda
1 tsp baking powder
Pinch salt (optional)
2tsp cinnamon
1cup carrots, shredded
 
1 cup dark chocolate chips 1 cup chopped walnuts
¾ cup milk or vanilla soy milk
2 eggs beaten adding
1 tsp almond or vanilla extract

Instructions
Mix dry ingredients together. Stir in carrots, apples and nuts.
Mix liquids together then add to dry ingredients until mixture is moist.
Fill muffin tins approx ¾ full (use a 12 muffin tin).
Bake 30 minutes at 350 degrees.
Serving Suggestions
Apples should be chopped until applesauce consistency. Carrots should be chopped to smallest possible bits, and nuts chopped to desired size.
