     Beef-Cranberry Chipolte

Ingredients
1 medium onion, cut in wedges
2 to 21/2 pound bonelss beef chuck pot roast
2 teaspoons minced garlic
1/4 teaspoon each salt and pepper
1-16 ounce can cranberry sauce
1 to 2 teaspoons finely chopped canned chipolte chili peppers in adobo sauce
 

Instructions
Place onion in bottom of slow cooker. Place roast on top of onion and sprinkle with garlic and salt and pepper. In a small bowl combine remaining ingredients and pour over beef. Cook on low 6 to 8 hours.
