     Spanish Rice

Ingredients
1/2 cup finely chopped onions
1/2 cup finely chopped peppers
1/4 cup finely chopped celery
2 TBSP olive oil
1 cup brown rice
1/4 tsp salf
1 TBSP chili powder
1/2 tsp garlic powder
1 cup tomato sauce
 
2 cups water

Instructions
Cook onions, green peppers and celery in oil until tender. Add uncooked rice, and stir over heat until completely coated with oil. Add seasonings, tomato sauce and water. Stir to combine. Cover and bring to boil. Lower heat, and cook 45 minutes or until rice is tender and liquid is absorbed. Don't lift lid during cooking.
