     Cook Off Chili

Ingredients
2 tbsp vegetable oil
1 medium sized yellow onion, diced
2 tbsp chile powder
1 tbsp ground cumin
1 teaspoon ground oregano
1 teaspoon cayenne pepper
1 pound ground beef or ground turkey
1 green bell pepper, finely chopped
5 clove garlics, minced
 
1 jalapeno, seeded and minced
1 tbsp tomato paste
1 (32-oz) carton low sodium chicken broth (4 cups)
1 (28-oz) can diced plum tomatos with juice
1 (15-oz) can pinto beans rinsed and drained
Salt and pepper to taste
Sour cream for garnish
Cheddar cheese for garnish
Chopped green onion for garnish

Instructions
Set Dutch oven over medium high heat and add oil. Add onion and suate until translucent about 3 mins. Stir in chile powder, cumin, oregano, and cayenne. Cook, stirring frequently for 1 min. Add ground beef, breaking up meat as it cooks. Add bell pepper, garlic, jalapeno and cook until soft.
Drain excess grease from meat. Add tomato paste and chicken broth and bring to boil. Reduce heat, cover and simmer for 30 mins. Add tomatoes (with juices) and beans. Add salt and pepper. Simmer 30 mins to 1 hour. Serve with garnish.
