     Baked Grits

Ingredients
6 c water
1 t salt
1 1/2 c quick cooking grits
1 1/2 sticks butter
1 t seasoned salt
1 can diced green chilies (4oz)
1 lb Velveeta cheese, cut in cubes
1 can Ro-Tel tomatoes
3 eggs beaten
 

Instructions
Bring water to a boil with the salt. Add grits and cook according to directions on box. Add everything except the eggs, this will cool them down enough to add the eggs. Add the eggs, mixing well.
At this point you can eat right away or bake for one hour at 350. Depends on how you feel about the eggs not being cooked all the way.
