     Unstuffed Cabbage 1 & 2

Ingredients
1 small cabbage about 1 lb, (or pkg of coleslaw mix)
1 lb ground meat, calls for turkey, (I used ground beef)
1/2 c chopped onion
3/4 c instant rice
1 t salt , (I used seasoned salt)
1 t pepper
2 10 oz cans tomato soup
2 c water
1/2 c parmesan cheese, grated
 

Instructions
Preheat oven to 350. Brown meat with onion. Stir in rice, salt and pepper. Finely chop cabbage and layer in the bottom of a 9x13 pan. Spoon meat mixture over cabbage. Mix soup and water and pour evenly over the top. Sprinkle with Parmesan cheese. Cover pan with heavy-duty foil , bake for 90 minutes.
Recipe suggests using marinara sauce for more flavor.
06/21/2011 recipe from a 1/10 Family Circle is close.Kim Lee Cooper, Highland Lakes, NJ. 1 lb hamburger, 1 medium onion, 3 cloves garlic, 1 28 oz can stewed tomatoes, 1 6 oz can tomato paste, 1 1/2 t dried parsley, 1 1/4 t salt, 1 t sugar, 1 t oregano, 1/4 t black pepper, 1 small head of cabbage, shredded. About 8 cups.
Heat a large non stick saucepan and cook ground beef. Drain fat, stir in onion and cook 4 minutes. Add garlic, cook 1 minute. Add tomatoes and paste. Break up tomatoes with masher. Stir in 1 1/4 c water, parsley, salt, sugar, pepper and oregano. Simmer 5 minutes. Add half the cabbage and cook covered for 5 minutes. Add the remaining cabbage, cover and simmer for 90 minutes stirring occasionally. Serve with mashed potatoes and green beans.
